Banana Bread

Its so easy and has been one our best sellers for many years!

1 1/2 cups self-raising flour

1/2 teaspoon bicarb soda

pinch nutmeg

pinch salt

3/4 cup raw sugar

125g unsalted butter, melted

2 eggs lightly beaten

1/2 tspn vanilla essence

1/4 cup of milk

3 large ripe bananas, mashed


Preheat oven to 160 C. Grease a loaf tin approx. 30cm long x 10cm wide, line with non-stick paper.

Sift flour, bicarb, nutmeg and salt into a bowl. Stir in sugar. In a separate bowl, combine melted butter, eggs, vanilla, milk and mashed bananas. Pour mixture into dry ingredients.  Pour mixture into the loaf tin and bake for 45 to 50 minutes or until a skewer insered comes out clean.  Leave in tin for 5 minutes before turning on to a cake rack. When cool cut into 3 cm slices and toast under a grill, then serve with fresh strawberries and marscapone, drizzled honey and icing sugar.
