Caf Health Cookies

There’s lots of goodies in this recipe!

1 cup almonds

1 cup dates

1 cup dried apricots

1 cup hazelnuts

1 ¼ cup plain flour

2 ½ cups rolled oats

1 cup sultanas

1 cup desiccated coconut

½ cup poppyseed

2/3 cup honey

½ cup maple syrup

180 g butter

2 teaspoons bi carb soda


Place almonds, dates, apricots and hazelnuts in blender and mix till “well chopped”.  Combine dry ingredients, flour, oats, sultanas, coconut, poppyseeds, in a bowl.  Place honey, maple syrup and butter in a saucepan and heat till butter is melted, remove from heat and add bi carb.  Add the heated mix to the dry ingredients, mix well.  Add the blended fruit and nuts.  Roll into large size balls and bake at 180 degrees for 20 to 25 minutes.
